An Indian-style breakfast dish. This also contains rice (and plenty of it) and it's easy to make. You can swap out a little bit of olive oil for the butter, if you prefer.
Preheat oven to 350 F
Oil a 2-quart baking dish
In a large bowl, combine all remainig ingredients except eggs.
Transfer to baking dish.
Arrange eggs on top.
Cover tightly with lid or foil.
Bake until hit, about 20 mins.
Garnish before serving.
