These kefir sodas were pioneered by Sarah Pope, WAPF chapter leader for Tampa, Florida.
Place all ingredients in 2 quart glass container, fill to top with filtered water, cover tightly and leave at room remperature for two days. If making berry soda, only use the kefir powder as the kefir grains will ferment too much of the sugar to alcohol. Also, carefully skim off foam that rises to the top. When finished, strain liquid through a nonmetallic strainer. Store soda in original glass container in fridge or transfer to a glass beer or soda bottle capped with wire-held caps.
Store used grains by rinsing first then placing in a glass container filled with 1/2 cup water and 1 tablespoon sweetener.
If using powder, reserve 1/2 cup of soda as starter for the next batch. This will work for the next 5 or 6 batches.
