This is a delicious, warm and comforting cabbage curry "stew". The recipe was given to me by my friend in New Zealand and I have tweaked it a bit. It has become a staple at our home......and my husband "claims" he doesnt like curry!!
Brown onions and meat in large pot or dutch oven (drain fat if necessary)
Add balance of ingredients (EXCEPT CHICKEN NOODLE SOUP) adding cabbage a bit at a time until it cooks down and more can fit into pan (if your pan is on the smaller side). Keep adding cabbage until all is used.
Simmer for 45 minutes.
Add chicken noodle soup mix to pan and simmer another 15 minutes stirring frequently to prevent sticking, if necessary. Mixture should be thick and a bit saucy.
Serve with chewy Italian Ciabatta bread and enjoy!!!
