Suggest a better description1. In a large ceramic/pyrex bowl, mix together flour, yeast and salt.
2. Add water. Mix with a silicone spatula.
3. Cover bowl in saran wrap and let rise for 12-24 hours. Avoid direct heat.
4. On a large cutting board, sprinkle liberally with bread flour. Using spatula, move dough from bowl to board. Fold dough onto itself 5-6 times. Add flour if dough is too wet.
5. Put dough back in bowl and cover with a towel to let rise for 1-2 hours.
6. Put a covered pot in over and preheat to 450°.
7. Sprinkle the bottom of the preheated pot with flour. Fold dough again and plop ball of dough gently in the center of the pot and bake covered for 30 minutes.
8. Remove cover and bake for another 10 minutes.
