Ken's special version for Chicken Breasts.
Inspired from the Marsala classic..
Filet and salt and pepper chicken. Flour and saute with Oil and butter until lightly brown on both sides. Set aside.
Add Onions and lightly saute, add mushrooms, season, cover and simmer 2 mins.
Uncover and cook until water almost gone. Add wine and bring to boil. Add tomatos and bell peppers.
Simmer covered 15 mins
Uncover. Add Chicken broth and sherry and continue to simmer and season to taste.
Cut chicken into thirds and add to tomato base. Simmer for 10 more mins on low.
Add 2 tablespoons of butter and quickly stir into base.
Serve with Angelhair Pasta and Zuccichini.
