1 In a medium saucepan, heat olive oil over medium-high heat. Add
onion and garlic and sauté for 2 to 3 minutes.
2 Add tomatoes, dates, salt, and pepper. Increase heat to bring to a
boil. Once bubbling, remove from heat.
3 Transfer the mixture to a blender or food processor and blend for 1
minute, or until mixture is smooth.
4 Transfer to an airtight container and refrigerate for up to 2 weeks.
