Preheat oven to 390F.
Coat 9x5 inch loaf pan with 1 Tablespoon of butter.
In large bowl, use hand mixer to mix eggs, almond flour, remaining 4 tablespoons of butter, baking powder, MCT Oil powder and salt until thoroughly blended. Pour into prepared pan.
Bake 25 mins or until toothpick inserted in center comes out clean.
Slice and serve.
VARIATIONS:
Pumpkin Bread: Mix all ingredients together along with 1/4 can of pure pumpkin puree. Mix 2-3 teaspoons liquid stevia and 1 tablespoon of pumpkin pie spice.
Chocolate Chip Bread: Mix all ingredients as instructed. Fold 1/2 cup of keto friendly chocolate chips. (eg Lilly's brand)
