Preheat oven to 350 degrees. Put muffin liners in muffin pan.
Mix all ingredients except chocolate chips together well in a mixer. Stir in chocolate chips.
Use large cookie scoop to put mixture in 12 muffin liners. Should be just enough using a generous scoop.
Bake 15-17 minutes until filling is set and tops are beginning to crack.
Remove and chill in refrigerator until chilled through, and eat.
