First you need to make your ricotta mixture. Mix together 1 cup of ricotta, 1 lightly packed cup of chopped raw spinach,1/4 tsp italian seasoning, 1/4 tsp pepper, and 2 ounces of cream cheese. Set that aside. Preheat the oven to 375 degrees. On the stove brown 1 pound of ground beef, drain it and add 1 TBSP minced garlic and 1 TBSP italian seasoning back on the stove until fragrant. Set aside. In an oven safe 8x8 dish layer 1/4 cup marinara in bottom of pan, 4 egg thins, 1/2 cup ricotta mix, 3/4 cup marinara, all of your ground beef mixture, 3 egg thins (1 cut in half like a moon covering the area), rest of the ricotta mix, 2 cup of marinara, and top with 1 cup of mozzarella. Place in oven on 375 and bake for 20 minutes until hot and bubbly. Flip to broil for 2 minutes for a crispier cheese on top. Top with fresh parsley and serve! We use great value whole milk ricotta, Costco Victoria organic marinara, Costco Kirkland shredded mozzarella, and our egg thins are from Aldi but you can find them at Costco also. Keep in mind that the ingredients you choose in any recipe will affect the macro break down of your food. Ours comes in at 7 net carbs, 22 fat, 32 protein, 367 calories.
