Cut the pork in 1 inch dudes and season with salt and pepper. Fry the onion in some butter in a frying pan over medium heat until golden. Add the seasoned pork and fry until browned on all sides.
Transfer the pork and onions to a stew pot. Add the coconut milk and butter and simmer for about 45 minutes. You can leave it on longer if you want the meat more tender, but do not cook it for more than 2 hours.
