FILLING: Whisk yolks and zest together in a medium nonreactive bowl until mixture has a light green tint (about 2 min). Whisk in the sweetened condensed milk until smooth, then whisk in the lime juice. Cover the mixture and set aside until thickened (about 30 minutes).
CRUST: while filling thickens, prepare crust. Adjust over rack to lower-middle position and heat to 325. Toss graham cracker crumbs, melted butter and sugar together in a 9-inch pie plate. Press crumbs into an even layer on the bottom and up the sides. Bake crust until fragrant and beginning to brown (15-20 min).
Pour thickened filling into the warm crust. Bake (still at 325) until center is firm but wiggles slightly when jiggled (15-20 min). Cool on wire rack then refrigerate until well chilled (at least 3 hours).
For topping: Just before serving, whip together the cream and confectioners sugar in a chilled bowl until soft peaks form. Spread over top of pie and serve.
