Easy and Super Yummy Key Lime Pie!
~Pie Shell~
Preheat oven to 375°. Mix graham cracker crumbs, sugar (3 tablespoons) and butter in a bowl. Press in the bottom and up the side of a 9 inch pie pan.
~Pie Filling~
Grate 2 tablespoons of lime peel before juicing and set to the side.
Juice limes (if you cannot find key limes you can substitute using half lemon juice and half regular lime juice) and strain the pulp and seeds.
Combine egg yolks, sweetened condensed milk, lime juice and some of the grated lime peel. Mix well and pour into the graham cracker shell.
Bake in preheated oven for 15 minutes. Allow to cool.
~Whipped Topping~
Whip the heavy cream until almost stiff. Add sugar (1/4 cup) and vanilla. Beat until cream holds peaks. Be careful not to over beat.
Top cooled pie with whipped topping and garnish with grated lime peel. Refrigerate at least 1 hour before serving.
