I recently got really good pastrami from a place called The Shed in Healsburg, CA and it's what inspired this dish. I had a few other ingredients lying around, like kimchi, and wondered what it would be like to make a Reuben with kimchi instead of sauerkraut. The rest is history.
Prep:
Julienne pastrami and kimchi separately and set aside. In a bowl, prepare the amazeballs island sauce by mixing together mayonnaise, spaghetti hot sauce, tomato paste, lemon juice, honey, salt, and pepper. Taste check it for a good balance of spice, sweet sour, and salt—adjust to your tastes.
Cooking:
Lightly toast the two slices of bread (one side) in a cast iron skillet or frying pan with a little bit of olive oil and butter on medium-high heat. Move them around a bit in the pan to soak up the oil/butter mixture. Once just the one side of each slice is lightly browned, place on a cooling rack for later so they don't get soggy*. Put the pastrami in the same pan that the bread was in and cook for about two minutes, flipping around a bit with some tongs to get even heat.
Next, loosely form the pastrami in the shape and size of your slices of bread, move to one side of the pan, and put the cheese on top. Add the kimchi to the other side of the pan and mix around a bit to evenly heat. About a minute later, put the kimchi on top of your pastrami/cheese pile.
While everything is cooking in the pan, add a generous helping of your amazeballs island sauce to both slices of bread—non-crispy side. With a long spatula, gently maneuver the pile out of the pan and onto the bread. Close that puppy up, cut it in half, and enjoy.
*It happens, and nobody likes soggy bread.
