This is TexMex spicy but OH SO Good!!
Saute onion and green pepper until soft in cast iron skillet coated with pam. Add ground beef and cook until browned. Add taco seasoning and mix well.
In a sauce pan combine enchilada sauce and Rotel tomatoes and sour cream, mix until smooth. Heat on medium heat until simmering.
Soften the tortillas in a heated dry pan and add beef mixture and top with jalapeno shredded cheese. Roll up and place in a 9x13 pan coated with Pam. Repeat this process until meat mixture is gone.
Pour sauce over the enchiladas and bake at 350 for 30 minutes or until bubbly.
Add shredded sharp on top and bake for an additional 10 minutes.
Serve with ranch style beans or refried beans and tortilla chips
