This is a garlicy Polish sausage. That makes Natalie's heart melt.
Cut the meat into 1" square pieces, and put into the freezer until the meat is solid. Grind the pork through a 3/8 plate and beef and fat through 1/4 plate. Mix all the spices and herbs together, then mix them into the water products. Keep the mixture cold! In a big bowl mix the frozen ground meat and the cold spice mixture together. Stuff the well blended meat mixture into the casing.
Perforate the casing every 2". Smoke for 2 to 4 hrs at 170 to 250, until internal temp is 155 - 160.
