Cover roast liberally with Rub mixture. Inject roast all over with Kimchi butter. Let sit for 30-45 minutes.
Heat oil in a pressure cooker over medium high heat. Brown roast on all sides. Remove roast and set aside.
Add a splash of broth to to the brown bits in the pressure cooker. Add white onions and garlic and cook for 1 minute. Line the bottom of the pressure cooker with the red onion slices to elevate the roast. Add broth, bay leaves, and sliced ginger. Place roast back in the pressure cooker.
Get the pressure cooker to pressure then cook for 10 minutes. Let pressure release. Let the roast sit for 10 minutes.
