Suggest a better descriptionSet aside a couple of leaves of Napa cabbage and chop the rest coarsely, roughly into squares 1” to a side.
Toss all of the ingredients together, and leave it to sweat. After it has sweat, pack it firmly in jars with a wooden spoon.
Top the contents of the jar with a large piece of cabbage leaf, and add a small amount of water to cover it if necessary. Weight with the small jar and ferment as for sauerkraut.
