My version of Shepard's Pie. I don't use as much liquid and I use turkey instead of beef for a tasty, yet healthy dish.
Brown the first four ingredients in a large skillet and start the potatoes boiling for the mashed potatoes.
After browned, add spices and hot sauce to taste and reduce heat while waiting for potatoes. (I also add some worcestershire sauce at this point).
When potatoes are soft enough to be mashed, add the tomato paste and sherry, beer or water to the browned turkey.
Mash potatoes with the milk, sour cream, butter and spices to your taste preferences.
Add the frozen peas to the ground turkey mixture for just a minute or so.
In a casserole dish, place the turkey mixture on the bottom. Sprinkle half the cheese over the meat. Spread the mashed potatoes over the top. Sprinkle the rest of the cheese over the potatoes.
Place in 375 degree oven for 20-30 minutes, until cheese is browned.
Sorry I don't have exact measurements. This is one of those recipes that you must taste as you go and adjust your spices accordingly. It is perfect for chilly winter nights!
