Poached Kippers with curried rice and egg
Dice all vegetables except the beets
Fill two pans with water
Put the vegetables into one except the beet and bring both to the boil
When the pan with the vegetables is boiling add the rice
Into the other pan add the Kippers
Arrange the beet into a fan around the outside of the plate and warm
Soft poach two eggs
When rice is cooked drain well and mix in the curry powder
Dress into the center of the plate
Dress fish on top of the rice
Finnish with the egg and serve
