Suggest a better descriptionMix the cheeses together. Bring the water and sugar to a boil. Cook for 5 min. Add the lemon. Boil another 5. Take off the heat. Add the rosewater. Set aside and keep hot.
Butter a pie tray generously. Heat the oven to 180
Add half the butter on the dough and rub with your fingers till every piece is buttered. If needed, add some more. The entire thing depends on the butter. If it's too little you wont get the right result. It needs to be nicely covered. Put the dough at the bottom of the tray. Spread evenly making sure there are no holes. Press down hard. Add the cheese making sure it doesn't get to the sides of the tray so it doesn't stick but as close as possible. Press down lightly. Cook at the bottom of the oven till the dough is golden, about 15 min. I het better results stove top, moving the tray in a circle all the time to get heat everywhere. U can pull out of the oven and check and make sure its golden otherwise its raw.
Take out and flip upside down on a larger plate, preferably a warm one. Your cheese will melt more. Immediately drizzle with hot syrup. Add the pistachio and you are ready to dig in!
