Easy and delicious
Prepare pasta side according to package directions. After cooking about 3 minutes, add spinach and tomatoes. Continue cooking about 5 minutes more or until pasta is done.
Meanwhile melt butter and oil in medium skillet. Add onions and mushrooms . Sautee about 1 minute and add shrimp. Cook until shrimp are pink, about 5 minutes. Add to pasta mixture and stir. Sprinkle with cheese and serve with more cheese if desired.
Note: You can substitute 1 pound of cut up chicken for the shrimp..
