Derived From a recipe of Deborah Madison's, from her cookbook Vegetarian Cooking for Everyone.
1. Steam the kohlrabi until tender, 5-8 minutes. Drain and rinse with cool water to stop cooking.
2. Toss kohlrabi with creme fraiche, horseradish (to taste), lemon juice (to taste), and fresh dill. Season to taste with salt and pepper.
