For the marinade:
Combine all ingredients except for chicken wings and mix well. Add to dish with chicken wings and coat well. Cover and refrigerate at least 1 hour, but overnight if possible.
For the sauce:
Combine all ingredients in a blender and mix well. Seal and refrigerate until ready to use. Store for up to 3 days.
For the wet and dry mix:
Combine dry ingredients in a casserole dish. Separate out half of dry mix. To one half, add two eggs and combine. Batter may be very thick. Add an additional 1-2 eggs as needed. If mixture becomes too wet, add more cornstarch. Final mixture should be the consistency of paste.
To make wings:
Preheat oil for frying to 350 degrees F. Make sure enough oil is used to completely submerge wings when frying. Use a heavy-bottomed, deep pot. Remove wings from refrigerator and allow to come to temp.
Working in batches, dip wings one at a time in wet mixture and coat completely. Allow excess to drip off then dredge in dry mix. Make sure to completely coat wings in both wet and dry mixture. Slowly lower into heated oil and fry 7-10 minutes until a medium golden brown. Remove from the oil and allow to drain on a wire rack.
Once all wings are fried, bring oil to 400 degrees F. Starting with first wings fried, add back to the oil and fry again for 5-7 minutes until deep golden and crispy. Remove and allow to drain on wire rack.
Add wings to a bowl, bucket, or pot and toss in sauce. Serve with sliced green onions and sesame seeds.
