A wonderful tasting and healthy, poached Salmon Recipe.
Place the wine, water, 1/2 lemon thinly sliced, sea salt, peppercorns, into a small to medium saucepan which will just fit the salmon fillets.
Bring to boil and immediately turn hob down to the lowest setting.
Place Salmon into saucepan.Poaching fluid should have a slight heat/steam haze coming off it at all times. Salmon Filets should be covered, if not remove fish and add more wine and water in equal portions. Poach for 8-10 minutes. Start drinking remaining wine ;-)
Test salmon with fork, should flake when touched and be cooked through or with a fine pink line through the center.
Serve immediately with a slice of remaining lemon, garlic aioli or tartare sauce and lightly steamed seasonal vegatables. Love this with asparagus, beans or snow peas.
