Cut kumquats lengthwise and slice thinnly. Put seeds and pith in cheesecloth.
Combine kumquats, cheesecloth, lemon juice and water in a large saucepan. Bring to a boil and leave to macerate overnight.
Add sugar, salt and spice to pan. Cook to 220 degrees.
