Arabic Honey Cake goes great with strong black coffee or tea after dinner!
Preheat oven to 400 degrees F.
Grease a 10" square baking pan with butter or oleo.
Make the cake first:
Melt the butter in a small saucepan (or use a small dish and the microwave)
Using an electric mixer, beat together sugar, eggs, and vanilla 7-10 minutes. Mixture will turn pale white.
With mixer on, drizzle in melted butter and stir completely.
Using a sifter, sift together the flour and baking powder.
Gently add flower mixture into the wet mixture with mixer on low.
Pour mixture into 10" square baking pan and bake for 10 minutes. (yes, 10 minutes.)
In the meantime make the "topping":
Melt 1/2 cup butter in a saucepan. When melted, add sugar, honey, cinnamon, and almonds and stir constantly bringing the mixture to a boil.
(careful, you are stirring melted sugar!!!!!)
Remove cake from oven and pour mixture over cake. Some mixture will stay on top and some will sink a little so it winds up in the center of the cake when the cake is finished baking.
Return cake to oven and cook for another 15 minutes.
Remove from oven and allow to cool completely before servings.
The directions make it sound more complicated than it is. This is a REALLY REALLY sweet cake. Again, it needs to be served with a strong black coffee or tea. Its really delicious!
