Suggest a better descriptionLine a 2 1/2 quart soufflé dish with plastic wrap. Cut the pound cake into thin slices and line the bottom and sides of the soufflé dish with overlapping layers ( so there are no openings). Put an additional layer on that bottom so it's two layers. Sprinkle cake with the two tablespoons of the amaretto.
Mousse:
Combine the amaretto, rum, Heath bits, melted butter, and egg yokes. Stir well. In a double boiler melt the 1 1/2 # chocolate. Remove from heat and allow to cool slightly.
Whip the cream until stiff and set aside.
Whip the egg whites with a pinch of salt until stiff. Slowly add 1 tablespoon powered sugar and beat one minute.
Slowly add the chocolate to the liquor mixture, stirring well to combine. Fold in the beaten cream and egg whites.
Pour into the prepared soufflé dish.
Use the rest of the pound cake with overlapping layers to cover the top.
Wrap with plastic wrap a d refrigerate at least 10 hours.
Icing:
Melt the 1/2# chocolate. Use an electric mixer to beat in the powered sugar. Add the coffee slowly to make a smooth icing. Let the icing cool slightly before icing the cake.
Ice the cake:
Invert the chocolate velvet on a plate. Remove plastic wrap. Spread frosting and refrigerate until ready to serve.
Serve with cream fresh or whipped cream
