Suggest a better descriptionPlace granulated sugar, eggs, yolks, salt and lemon in machine kettle. Heat to 110 over hot water bath. Beat until light and firm.
Sift flours to blend. Fold in gently to the beaten egg and sugar mixture.
Use a plain tube with about a 5/16" opening. Deposit on paper in the form of small fingers about 2-3/8" long. After the sheet of paper has been filled with the fingers, dust at once with powdered sugar. Then grasp the paper on each end of upper side and raise it so that it hangs in such a manner that excess sugar is removed. The paper is then placed on baking pans.
To bake the fingers properly, the oven should have a moderate bottom heat with a flashy top heat. After baking, the paper of fingers is removed from the pan at once. This is important, for to allow the fingers to remain on the hot pan would cause the fingers to dry out. The paper is then turned onto the bench so that the paper is top side up. The paper is then washed with a water brush to moisten. Do not wash too heavily as this would permit the excess water to run onto the bench and the fingers would be soaked. Allow the paper to soak for a short period of time so that the fingers are readily removable. If the fingers are to be used for Charlotte Russe, they should be left as they are.
