"This menu has really got it all going on. Not only is it quick and easy to prepare, but it's fresh tasting and just plain delicious. And for a bonus, it's special enough that you just might want to serve it to company, or for a spring holiday dinner. Naturally tender and slightly elegant, lamb chops are a great alternative to the usual weeknight fare. Resembling tiny T-bone steaks, loin shops include meat from the tenderloin and short loin. This cut is more economical, and less fussy than rib chops, too. In keeping with traditional flavor pairings, serve the chops with the tangy mint sauce. Then keep the pairings going and toss peas into orzo with a helping of chimichurri for a completely satisfying meal." PREHEAT broiler to high with rack 3 inches from element. Line a baking sheet with foil.
FOR THE CHIMICHURRI, PURÉE mint, parsley, oil, vinegar, lemon juice, garlic, scallions, and jalapeño in a food processor; season with salt, pepper, and sugar. Reserve 1/2 cup chimichurri for Orzo & Peas (linked recipe).
FOR THE LAMB, SEASON chops with salt and pepper; transfer to prepared baking sheet. Broil chops, flipping once, until an instant-read thermometer inserted into the centers, but not touching bone, registers 145°, about 10 minutes.
SERVE chops with remaining 1/2 cup chimichurri.

1. For the right amount of herbs, pack the mint and parsley in measuring cups, but not too firmly.
2. If you want a little extra heat, remove the seeds but not the ribs from the jalapeño.
3. Seasoning with sugar balances the brightness of the chimichurri and complements the mint, too.
