Fragrant and tender ground lamb that can be skewered or not.
Heat a skillet and add the coriander seeds, the whole cumin and the allspice. Heat until aromatic. Place in a blender and process until powdered. Set aside and mix with the powdered ginger, cinnamon, and cayenne.
In a blender or processor, chop onion, parsley, mint leaves, and kosher salt until very fine.
Mix the lamb with the beaten yolks, lemon juice, olive oil, and breadcrumbs. Add the ground spices. Put the aromatics in a plastic bag (ziplock) and cut a few slits in the bag. Squeeze out as much of the liquid as you can and save the liquid. Add the squeezed-out aromatics to the meat mixture and then add as much of the squeezed-out liquid from the aromatics as you can (lots of flavor) but make sure that you can still shape the meat mixture into "sausage" forms. If you "over watered," add some more bread crumbs. This recipe is very forgiving. These "sausages" can be skewered or not. Your choice. Place them on the grill on high heat. Serve with a good yogurt such as fage, sliced tomatoes, and rice.
