put garlic, chopped coriander roots, all spices and salt into a mortar & pestle and ground them well, I personally use flavour shaker.
Then combine spices, torn bread, onion, eschallots and spices, work it with hands till smooth like sausage meat consistency.
Put the mince around skewer gently squeezing to desired shape and size. Its best to soak the skewer first.
Cook on a grill or barbie.
For the rice:
Cook long grain rice like you normally cook them but substitute the water with home made chicken stock. Season with salt and pepper. Once rice is cooked , stir through rinsed chick peas (canned) . Instead of chickpeas, cookeed shreded chicken or cooked cubed chicken can be used
