Combine all ingredients together. Rub the marinade onto the lamb loin and leave for 24 hours.
When ready to cook, bring the lamb loin up to room temperature. Wipe off marinade and season with salt and pepper. Grill on a hot grill for two minutes a side to give the loin a nicely browned crust before finishing it in a 375 degree oven for 20 minutes. remove from oven and let rest for 10-15 minutes before cutting into.
