Add a little oil to a large pan over a medium heat and sauté the onions until they are just starting to brown.
Add the meat and stir it into the onions and brown well.
Add the spices and salt and give it all a good stir.
Add the honey and stir again.
Reduce the temperature and add enough boiling water to just cover.
Simmer gently for 1 1/2 hours.
Add the apricots and simmer for another 45 minutes.
