Lamb Chops
• Drizzle chops with olive oil & season with salt, fresh ground pepper, rosemary and garlic.
• In an oven proof pan brown both the chops over medium high heat. About 4 minutes per side.
• Place the pan and chops in the oven and bake at 325 °F for 10 to 15 minutes, depending on thickness of the chops.
• Place chops on a serving platter and let rest while the gravy is made.
• Mix the flour and chicken stock together.
• Return the pan to the stove top and add the chicken stock & flour mix tot the pan. Bring to a boil, scraping any brown bit from the bottom of the pan. Stirring constantly, cook until the gravy has thickened.
• Spoon the gravy over the chops and serve immediately.
