Sauté onion and pepper until tender, add garlic the last minute.
Return meat to pan with sautéed veggies, add crushed tomatoes, spices, and bay leaf, Cover and simmer.
Cut squash and remove seeds. rub cut side with olive oil and season with salt and pepper. Roast cut side down for 1 hour @ 400 degrees.
Let cool 15 mins. Shred squash with a fork to make spaghetti strands. Drain in a colander lined with paper towels to soak up the extra liquid.
Add meat mixture and ricotta cheese (for lasagna) and fill squash bowls, cover with cheese and Bake 20 mins at 350. Broil for 2 mins or until cheese starts to brown.
