a twist on the classic lasagna, this can be a hot dish with hot sauce added as an optional step.
Lasagna noodles
Cook lasagna noodles in the usual fashion, in whole length because you will roll them up lengthwise.
Tomato Sauce
Combine tomato sauce (your fav brand) with basil and oregano, and mix well. Can preheat in a pot or microwave for 1-2 minutes.
Cheese mixture
Combine cheese mixture items, careful not to food process the spinache too small.
Final assembly
Pour tomato sauce onto plates and smooth out evenly on the plates equally.
Lay lasagna noodles flat, and put approx. 2 tablespoons on the end of each noodle and roll lengthwise into short wraps.
Place short lasagna wraps in the pasta sauce already on the plates.
sprinkle a little extra mozzarella cheese on top (not part of the 1/2 cup previously used).
optional: sprinkle grated parmesan, hot sauce, and bay or basil leaves on top of plates as needed to taste.
Finally, heat each plate in microwave for 1-2 minutes.
quick meal, quicker than lasagna too :-)
Got this out of family fun magazine, and made a few small spice changes.
stay light on the hot sauce! it is really not needed to taste.
