Use zucchini for the noodles and pine nuts to make the ricotta
Preheat oven to 325 degrees.
Pine nut ricotta
Place the pine nuts, lemon juice, and salt in a food processor, and pulse a few times, until thoroughly combined. Gradually add 6 tablespoons water, and pulse until the texture becomes fluffy, like ricotta. Set aside.
Noodles
Slice zucchini lengthwise into very thin slices. Sprinkle slices lightly with salt; set aside to drain in a colander.
Filling
Sauté the garlic, spinach and mushrooms in a small amount of oil
Assemble Lasagna
Spread 1/2 of the sauce into the bottom of prepared 9x9 pan. Then layer 1/3 the zucchini slices, 1/2 the ricotta mixture, all of the spinach/mushroom mixture. Repeat by layering more sauce, zucchini slices, and ricotta mixture. Spread remaining sauce evenly over the top; cover with foil.
Bake for 45 minutes.
