Tomato-Meat Sauce:
Heat oil in heavy casserole over medium heat. Add onion, carrot and celery. Cook, stirring, about 10 minutes or until onion is soft but not brown. Add beef, saute over medium heat, crumbling with a fork, until color changes.
Add tomatoes, garlic, bay leaf, oregano, pepper flakes, salt and pepper. Bring to a boil, stirring. Cover and cook over low heat, stirring from time to time (and crushing canned tomatoes, if using), 45 minutes. Discard bay leaf. Stir in tomato paste. Increase heat to medium and simmer uncovered 15 minutes, stirring often, until thick. Taste and adjust seasoning.
Ricotta Layer:
Mix ricotta, egg yolks, parmesan, parsley, nugmeg, salt and pepper in a bowl. Taste and adjust seasoning. Mixture should be flavored generously with nutmeg.
To prepare:
Prepare tomato-meat sauce and ricotta layer; set aside. Boil lasagna per directions (generally about 7 minutes). Drain and put them in 1 layer on towels and pat dry.
Prehat oven to 375. Butter a 13x9x2 baking dish. Spoon 1 cup tomato sauce on bottom of dish and spread evenly with a spatula. Top with 1 layer lasagne noodles, cutting some to fit in an even layer. Sprinkle with 1.5 cups fontina.
Top with another layer of noodles. Top with all of ricotta mixture by spoonfuls; carefully spread in an even layer. Top with another layer of noodles, then with 1 cups meat sauce. Sprinkle with 1.5 cups fontina.
Top with another layer of noodles. Spoon remaining meat sauce over top. Sprinkle evenly with remaining fontina, then with remaining parmesan.
Bake 30-40 minutes or until bubbling and lightly browned. Let stand 5 minutes then serve.
