-Clean and pick through the dal for any small stones and grit. Rinse several times in cold water until water is fairly clear. Soak in 7-8 cups of water in a saucepan for 10 minutes.
-Bring dal to a boil over medium-high heat. Skim any froth off the top. Reduce heat to medium-low. Stir in tumeric and simmer, partially covered, until dal is soft, about 20 minutes. Stir in salt
-In blender, in batches if necessary, puree mixture. Return to saucepan and bring to a gentle boil over medium heat.
-Add tomatoes, ginger, chiles and cilantro. Cover and reduce heat to medium-low and simmer for 10 minutes.
-In a small saucepan, heat oil over medium heat. Add sliced garlic and saute for 1 minute.
-Add curry leaves and cook until garlic is golden, 2-3 minutes.
-Pour mixture into dal. Cover and remove from heat. Allow to infuse for 5 mintues before serving
-Serve with rice
