2) Put in a bowl, cover in cold water, and mix. Let stand for about 5 minutes to soak up the excess starch.
3) Drain, and pour the potatoes onto a cloth. Ring out the excess water through the cloth.
4) Cover a pan about 1/4 inch-thick with oil and turn on the heat
5) Put the dry potato shreds in a bowl and mix with egg and matzo meal
6) Once the oil heats up and starts sizzling, take a spoon and spoon out clumps of potato in the pan. Flatten out and let fry. Flip, once it's golden-brown on the other side
