I tried this when the family was snowed in, with a fire in the fireplace and a football game on TV. Surprising, better than the average beef stew, and definitely a bowl of stick-to-the-ribs comfort food!
1. Layer all ingredients except parsley in slow cooker in order given.
2. Cover. Cook on high for 6 hours.
3. Immedietly before serving, garnish with parsley.
CWW: This is really good! I was concerned at first about the brown sugar and tapioca becausse it didn't seem like flavors that go with the traditional beef stew. But I am now a believer!
I used more beef than called for; about 3 pounds. I added 2 or 3 cloves of chopped garlic, some oregano, and put mushrooms on top. I skipped the parsley only because I didn't have any fresh in the house, but we didn't miss it.
