Suggest a better description1. Heat the veg oil in large saucepan or dutch oven set over med-high heat. When oil shimmers, add celery, onion, peppers, garlic, salt and pepper and cook, stirring frequently 3-4 min, until onion is translucent.
Add the chorizo and cook 4-5 min, stirring frequently. Add tomatoes, okra, paprika, file, and cayenne. Continue cooking 4-5 min, stirring frequently.
Add stock and vinegar and bring to a simmer. Decrease heat to low, cover and cook 20-25 min, stirring occasionally. File should thicken stew.
2. Add shrimp and andouille and stir to combine. Continue to cook for 4-5 min, until shrimp are just cooked through. Serve over rice topped with scallions and parsley.
