A robust and satisfying SOUP that is layered with flavor.
Get friendly with a fresh bunch of LEEKS not just because they enhance so many dishes but they are also a very important VEGGIE health wise!
Using your "Soup Pot", melt the Butter with the Olive Oil on a medium heat.
Cut the LEEKS off at both ends: above the dark green coarse leaves and also below the white ends as well. Peel off the first outer layer, split in halves and rinse well. LEEKS tend to hide sand or grit between their many layers.
Chop the LEEKS as you would a green onion and then toss them into a colander to re rinse.
Drain well and add them to the pot to saute gently until soft.
Peel & dice the Potatoes, roughly chop the cilantro and add these to the pot along with all the other ingredients.
Bring to a boil, cover , lower the heat to allow the Soup to gently simmer for about an hour.
Taste to adjust the seasoning. Remove the Bay Leaf before you puree the Soup.
Using a small hand blender (such as the Cuisinart) puree the soup to the consistency that you prefer. (If using a large blender add small portions to puree).
I suggest keeping some texture when pureeing but have also tasted it silky smooth.....experiment and decide.
FYI: Avoid using a food processor to puree in order to avoid a "gluey" consistency.
Try a drizzle of TRUFFLE OIL over each serving...mmmmmm!
Just follow the instructions and do not be afraid to taste and adjust.
