Suggest a better descriptionChop all the fruits and combine with the chopped nuts. Add pineapple jam. Dust 1/2 cup flour. Set aside. Can be done a day before. Make caramalized sugar. Sift together flour, spices, nutmeg, baking powder and salt.
Seperate egg white and yolks. Beat egg whites to a peak and set it aside. Beat butter until creamy. Add egg yolks one at a time and beat it smooth. Add essences. Alternately add flour, egg white, liquor, caramalized sugar. Finally fold in dried fruits mixture. Line bottom and sides of 2 loaf pans with wax or parchment paper. Add cake batter and bake in a preheated 325 degree oven for 2 and 25 or 30 minutes.
