From Mom Kucera
Cook potatoes, add butter, cream, salt and sugar while hot. I mash potatoes first, then rice it to get all lumps out. Cool good before you add flour. I put in fridge overnight. In the morning I add the flour, make them into rolls. Keep in fridge. Cut off slices as you go.

Flour the surface well before you start to roll out. Use a cloth covered rolling pin to roll out. Mom says the thinner the better. The griddle should be hot before you start to put the rolled lefsa on it very good
