I often do a joint of brisket in the slow cooker overnight for Sunday lunch and came up with this recipe to use the leftovers. Serve with spaghetti - very tasty.
1. Heat olive oil in a heavy based pan, add chopped onion and stir fry until softened.
2. Add salt, pepper, basil and stir, add green pepper, carrot, celery, stir fry until softened, then add mushrooms.
3. Add chopped brisket and stir, add tomato pasta sauce, bring to boil, crumble in stock cube, stir, and simmer gently for 40 mins. If the sauce appears a bit thick, just rinse the pasta sauce jar with water and add .
4. Serve with spaghetti and freshly grated parmesan cheese.
