My maternal family is from Croatia. I was able to visit there with my daughter in 2018 - absolutely beautiful and wonderful. This cake is from a Croatian cookbook. MAKE IT! it is incredibly delicious! It is different from any cake I've ever had. MAKE IT!!!

Preheat oven to 340 degrees (yes, 340). Grease an 8 inch round cake tin and line with parchment paper.
Place the water, sugar, olive oil, zest and lemon juice into a large bowl. Mix well.
Sift together the flour and baking powder.
Add the flour and almonds to the liquid mixture and mix until smooth.
Stir in the beaten eggs and mix until combined.
Spoon the mixture into the prepared cake tin and bake for 1 hour or until a skewer inserted into the middle of the cake comes out clean. Do not overbake.
Meanwhile, to make the drizzle icing, mix together the lemon juice, zest and enough icing (confectioner's) sugar to make a runny icing.
When the cake is ready, remove and cool in the tin for 10 minutes, then turn out onto a large flat plate and pour the drizzle icing over it.
Serve when cool.
The cookbook's author used lemons from trees in Korcula, Croatia. I used "regular" lemons from my grocery store, and they worked just fine!
For the caster sugar, I put a cup of sugar in my food processor and ground it down to a finer texture. This worked!
