Luscious Lemon Bars-always a hit
Preheat oven to 350 degrees. Grease a 9X13 inch pan.
In a medium bowl, stir together 2 cups flour, confectioner's sugar and lemon zest. Cut in the butter with two knives or a pastry cutter. Press into bottom of greased pan. Bake for 15 minutes, or until golden.
In a large bowl, beat eggs until light yellow color. Combine the sugar, baking powder, lemon zest and ? cup of flour until there are no lumps. Stir the sugar mixture into the eggs. Finally, stir in the lemon juice. Pour over the baked crust and return to the oven.
Bake for an additional 30 minutes or until the bars are set. Allow the bars to cool completely. Sprinkle lightly with powdered sugar, then cut into bars.
These bars are relatively simple to make and always a sucess--they will disappear quickly.
