1) Sift flour into a bowl, stir in sugar and lemon zest
2) Whisk in milk and egg then stir in blueberries
3) Fry
Sauce:
1) Heat sugar and water in a saucepan and stir until sugar is dissolved
2) Add blueberries and bring to boil over medium heat
3) Stir until thickened then add lemon juice
4) Leave to bubble then pour on pancakes
