Tart blueberries. Tangy lemon. Light, fluffy pancakes. Has there ever been a more delicious, refreshing combination? We can't think of any. Seriously. These delightfully sweet and sour cakes pair well with Sunday mornings, cold OJ, and the ease of a fresh breakfast without a ton of fuss.

Whisk together flour, sugar, baking powder, and salt in a large mixing bowl.
Add milk, lemon juice, lemon zest, egg, melted butter, and vanilla extract, stirring until just combined.
Heat a large frying pan over medium heat, coating with cooking spray. When hot, pour the batter onto the pan, using about ¼ cup for each pancake, and top with blueberries. Brown on both sides, about 1-2 minutes each.
Cool slightly before serving. Serve with butter, powdered sugar, and pancake syrup.
Storage: Pancakes can be stored in an airtight container in the fridge for up to five days or frozen for up to three months. Place a piece of wax paper or parchment paper between each pancake before freezing.
Frozen blueberries: If using frozen blueberries, allow them to thaw and drain in a colander and pat dry any excess moisture.
